Coconut Collagen Balls (AIP, Paleo, Keto, Whole30)

Makes: 12-15 balls

Prep time:

  • 1/2 cup coconut butter
  • 1 tbsp coconut oil
  • 1/4 tsp vanilla extract
  • 1 tbsp maple syrup (optional)
  • 1/2 cup collagen powder
  • ~1/2 cup shredded unsweetened coconut flakes to roll in
  • Instructions:
    1. In a microwave safe bowl, heat the coconut butter, coconut oil, and maple syrup for about 45 seconds.
    2. Add the vanilla extract and the collagen powder and stir until completely combined.
    3. Scoop the mixture into balls, roll in the unsweetened coconut, and allow them to firm up in the fridge before eating. Store in the refrigerator.
