Coconut Butter Tigernut Fudge Cups (AIP, Paleo)

Makes: 6 mini cups

Prep time:

  • 1/3 cup coconut butter
  • 1/4 tsp vanilla extract
  • 1 tbsp maple syrup
  • 1/3 cup Tigernut Butter we used this brand for this recipe Roots Classic Tigernut Butter
  • 1/3 cup Carob Glaze
  • Instructions:
    1. In a microwave safe bowl, heat the coconut butter, coconut oil, and maple syrup for about 1 minute.
    2. Add the vanilla extract and stir until completely combined.
    3. Divide the mixture into a lined mini muffin pan. Be sure to GREASE the liners well before pouring. If you don't have liners you can simply make your own using tin foil.
    4. Place the entire pan in the refrigerator to firm up (about 5 minutes) before adding the second layer. Warm up the tigernut butter in the microwave, ~30 seconds, and divide amongst the cups. Place the pan back in the fridge for another 5 minutes.
    5. Lastly, add the last layer of carob glaze. Allow cups to set up in the fridge for 5-10 minutes before removing and serving. Store in the refrigerator.
