Coconut Butter Protein Bars (AIP, Paleo, Keto, Whole30)

Prep time:

  • 1/2 cup coconut butter
  • 1 tbsp coconut oil
  • 1/4 tsp vanilla extract
  • 1 tbsp maple syrup (optional)
  • 1/3 cup collagen powder
  • *Optional Toppings: carob chips, chocolate chips, dried fruit, peeled tigernuts
  • Instructions:
    1. In a microwave safe bowl, heat the coconut butter, coconut oil, and maple syrup for about 45 seconds.
    2. Add the vanilla extract and the collagen powder and stir until completely combined.
    3. Transfer the mixture to a parchment lined baking sheet and form into a square. Top of with desired toppings by slightly pressing toppings down so that they stick. Refrigerate until completely set, about 15-20 minutes. Once set, cut into desired sized bars and serve. Store in the refrigerator.
