Coconut Butter Berry Cups (AIP, Paleo, Keto, Whole30)

Makes: 6 mini cups

Prep time:

  • 1 cup coconut butter
  • 2 tbsp coconut oil
  • 1/2 tsp vanilla extract
  • 2 tbsp maple syrup (optional)
  • 3/4 cup collagen powder
  • 1 cup berries for topping
  • Instructions:
    1. In a microwave safe bowl, heat the coconut butter, coconut oil, and maple syrup for about 1 minute.
    2. Add the vanilla extract and the collagen powder and stir until completely combined.
    3. Divide the mixture into a lined mini muffin pan. Be sure to GREASE the liners well before pouring. If you don't have liners you can simply make your own using tin foil.
    4. Press the berries on top, and then place the entire pan in the refrigerator to firm up (about 10-15 minutes) before removing and serving. Store in the refrigerator.
