Mini Banana Breakfast Muffins (AIP, Paleo)

Makes: 8 mini muffins

Ingredients:
  • 3/4 cup Tigernut flour
  • 2 tbsp tapioca starch
  • 2 very ripe bananas
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup coconut oil, melted
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • Instructions:
    1. Preheat the oven to 350F.
    2. Mash the bananas with a form.
    3. Add the banana and the rest of the ingredients to a bowl and mix until evenly combined.
    4. Grease a mini muffin tin and divide the muffin batter equally.
    5. Bake at 350F for 20 minutes, let cool before removing and eating.
