  • Crust
  • 3/4 cup tigernut flour
  • 1/4 cup maple syrup
  • 1/4 cup coconut butter
  • 1 tsp vanilla
  • Pinch of Salt
  • Lemon Topping
  • 1/2 cup fresh squeezed lemon juice
  • 1 cup full fat cococnut milk
  • 3 tbsp maple syrup
  • 1 tbsp coconut oil
  • 4 tbsp tapioca starch
  • Pinch of salt
  • Instructions:
    1. Preheat the oven to 350F.
    2. In a large bowl, mix together the tigernut flour, maple syrup, coconut butter, vanilla, and salt until evenly combined.
    3. Grease the bottom and sides of an 8X8-inch pan. Press down the crust evenly on the bottom of the dish. Bake at 350F for 15 minutes.
    4. Meanwhile, make the topping warming the lemon juice, coconut milk, maple syrup, coconut oil, tapioca starch, and salt in a small pot over medium heat. Allow the mixture to thicken, about 5 minutes, and then remove from heat.
    5. Once the crust has had a chance to cool, pour the topping over the crust. Allow the bars to set COMPLETELY in the fridge or freezer before cutting.
