Drunken Maple Doughnuts (AIP, Paleo)

Makes: 6 doughnuts

Ingredients:
  • 1 1/2 cups tigernut flour
  • 3/4 cup coconut flour
  • 6 tbsp maple syrup + extra for topping
  • 3 tbsp apple cider vinegar
  • 3 Gelatin Eggs
  • 3 tbsp cocomnut oil
  • 1 tbsp vanilla extract
  • 1 1/2 tsp baking soda
  • 1/8 tsp salt
  • Instructions:
    1. Preheat the oven to 350F.
    2. All all of the ingredients in a medium bowl and mix until evenly combined.
    3. Grease doughnut pan very well. Divide the batter evenly and press it down into the doughnut pan.
    4. Bake at 350F for 20 minutes, let cool before removing from pan.
    5. Drizzle extra maple syrup on top before serving.
