Tropical Energy Bites (AIP, Paleo, Whole30)

Prep time:

  • 1/2 cup peeled tigernuts
  • 1/4 cup unsweetened coconut flakes + extra for topping
  • 4 Medjool dates, pitted
  • 1/2 cup Tropical Fruit Mix or any mix of dried fruit
  • 1 tsp Tigernut Butter
  • 1 tbsp collagen powder
  • Instructions:
    1. In a heat safe bowl, soak the tigernuts in 1 cup of boiling water for about 10 mins.
    2. Add the tigernuts to a food processor and pulse until broken up into smaller pieces.
    3. Add the pitted dates, dried fruit, coconut, tigernut butter, and collagen powder and pulse until completely combined.
    4. Scoop the mixture into 1 tbsp sized balls and roll in extra coconut. Store in the refrigerator.
