Grilled Garlic Zucchini (AIP, Paleo, Keto, Whole30)

  • 3 large zucchinis
  • 2 tbsps olive oil
  • 1 tbsp balsamic vinegar
  • 1/4 tsp dried thyme
  • 1/4 tsp dried rosemary
  • 1 tsp minced garlic
  • 1 tsp salt
  • Instructions:
    1. Heat your grill on high.
    2. Quarter the zucchini by slicing them in half and then again lengthwise.
    3. Toss the zucchini in olive oil, balsamic vinegar, thyme, rosemary, garlic, and salt.
    4. Place zucchini on the grill face down for 3-4 minutes, until grill marks appear. Flip the zucchini over, lower the temperature of the grill to medium, and grill for another 6-8 minutes. Serve warm.
