Simple Roasted Japanese Sweet Potato (AIP, Paleo, Keto, Whole 30)

Ingredients:
  • 4 small Japanese sweet otatoes
  • Olive oil to taste
  • Salt to taste
  • Instructions:
    1. Preheat oven to 400F.
    2. Line a baking sheet with tin foil. Pierce each sweet potato with a fork or tip of a knife several times. Spread out the potatoes on the baking sheet and bake for about 1 hour, or until the potatoes are extremely tender and easily sliced through with a knife. The longer they bake the sweeter they will be!
    3. Slice open the sweet potato lengthwide. Drizzle with olive oil and season with salt. Serve warm.
