AIP Asparagus Soup (Paleo, Keto)
Makes: 4 servings
- 2lbs asapargus, ends trimmed, chopped into 4 pieces
- 2 tbsp avocado oil
- 2 medium onions, chopped
- 2 medium leaks (white and pale green parts only), chopped
- 6 cups chicken stock
- Salt to taste
- In a large pot over medium heat, sautee the onions in avocado oil until transuluscent.
- Add the chicken stock and asparagus. Simmer for about 15 minutes, until asparagus are soft.
- Puree the soup using a blender or immersion blender. Season with salt. Return to pot and serve.
