AIP Asparagus Soup (Paleo, Keto)

  • 2lbs asapargus, ends trimmed, chopped into 4 pieces
  • 2 tbsp avocado oil
  • 2 medium onions, chopped
  • 2 medium leaks (white and pale green parts only), chopped
  • 6 cups chicken stock
  • Salt to taste
  • Instructions:
    1. In a large pot over medium heat, sautee the onions in avocado oil until transuluscent.
    2. Add the chicken stock and asparagus. Simmer for about 15 minutes, until asparagus are soft.
    3. Puree the soup using a blender or immersion blender. Season with salt. Return to pot and serve.
