Taro and Coconut Milk (AIP, Paleo)
Makes: 4 servings
- 1 lb taro root, peeled, chopped into thirds
- 1.5 cans full fat coconut milk
- Salt to taste
- Vanilla extract to taste (optional)
- Boil taro root for 20 minutes.
- Drain and cube taro down into bite sized pieces.
- Add taro cubes and coconut milk back into large pot. Boil for 10 minutes. Season with salt and vanilla to taste. Allow to cool before serving.
