CooCoo for Coconut Macaroons (AIP, Paleo, Keto)
Makes: 6 mini macaroons
- 1/2 cup unsweetened shredded coconut
- 2 tbsp coconut butter
- 1/2 tsp vanilla
- Pinch of salt
- Preheat oven to 350F.
- Soften the coconut butter in the microwacve for 30 seconds.
- Mix the shredded coconut, coconut butter, vanilla and salt until evenly combined.
- Form into 1 tsp sized balls.
- Line macaroons over parchment paper on a baking sheet.
- Bake for 10 minutes, until macaroons have turned a golden brown. Allow to cool before eating.
