CooCoo for Coconut Macaroons (AIP, Paleo, Keto)

Ingredients:
  • 1/2 cup unsweetened shredded coconut
  • 2 tbsp coconut butter
  • 1/2 tsp vanilla
  • Pinch of salt
  • Instructions:
    1. Preheat oven to 350F.
    2. Soften the coconut butter in the microwacve for 30 seconds.
    3. Mix the shredded coconut, coconut butter, vanilla and salt until evenly combined.
    4. Form into 1 tsp sized balls.
    5. Line macaroons over parchment paper on a baking sheet.
    6. Bake for 10 minutes, until macaroons have turned a golden brown. Allow to cool before eating.
