Maple Roasted Delicata Squash (AIP, Paleo)
Makes: 4 servings
- 2 delicata squash
- 1 tbsp olive oil
- 1 tbsp maple syrup
- 1/4 tsp salt
- Preheat oven to 400F.
- Cut off the ends of each squash. Cut them in half length wise. Deseed them and slice them into 1-inch moons.
- Toss the sliced squash in the olive oil, maple syrup, and salt. Spread them out on a non-stick baking sheet or glass pan.
- Bake for 25-30 min or until browned with crispy edges.
