Maple Roasted Delicata Squash (AIP, Paleo)

  • 2 delicata squash
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • 1/4 tsp salt
  • Instructions:
    1. Preheat oven to 400F.
    2. Cut off the ends of each squash. Cut them in half length wise. Deseed them and slice them into 1-inch moons.
    3. Toss the sliced squash in the olive oil, maple syrup, and salt. Spread them out on a non-stick baking sheet or glass pan.
    4. Bake for 25-30 min or until browned with crispy edges.
