Pickled Red Onions (AIP, Paleo, Keto, Whole 30)

Makes: about 2 cups

Prep time:

  • 1 large red onion
  • 1/2 cup apple cider vinegar
  • 2 tbsp balsamic vinegar
  • 2/3 cup water
  • 1/2 tbsp salt
  • 1/4 tsp dried dill
  • 1 large mason jar
  • Instructions:
    1. Peel and slice the red onion. Add the onion to the mason jar.
    2. Pour in the rest of ingredients (vinegar, balsamic, water, salt, and dill).
    3. Close the lid and allow brine to pickle onions for 72 hours before trying.
