AIP Balsamic Onion Flowers (Paleo)
Makes: Serves 3
- 2 large red onions
- 2 tbsp olive oil
- 3 tbsp balsamic vinegar
- Salt to taste
- Preheat oven to 425F.
- Peel the onions and cut the root off so that the onions have a flat base to stand on.
- Slice the onions from the top to the root withoutcutting all the way through, about 1/2 of an inch deep. Cut each onion four times, so that they are cut into eight sections, leaving the root end intact.
- Dress the onions with the olive oil and balsamic vinegar so that they are completely covered. Season with salt.
- Cover the onions with foil and bake for 25 minutes. Remove the foil and vake for another 5-10 minutes to caramelize.
