AIP Oreos (Paleo)

  • 1/4 cup maple syrup
  • 6 tbsp coconut oil, melted
  • 1/2 tsp vanilla extract
  • 1/4 tsp balsamic vinegar
  • 1 Gelatin Egg
  • 1/4 cup coconut flour
  • 1/4 cup carob powder
  • 1 pinch salt
  • 1/2 cup coconut butter
  • 1/4 cup POWDERED coconut sugar (or maple sugar)
  • 1/2 tsp vanilla extract
  • Instructions:
    1. Preheat oven to 350F.
    2. Whisk together maple syrup, coconut oil, vanilla, and balsamic vinegar.
    3. Make gelatin egg by combining gelatin with 3 tbsp of warm water. Whisk gelatin egg with other liquids.
    4. Add coconut flour, carob powder, and salt and mix until cookie dough has formed.
    5. Divide the cookie dough into 18 equal sized balls (about 10grams each if using a scale). On a parchment lined baking sheet, flatten the dough balls into even rounds.
    6. Bake for 12-14 minutes, until cookies have firmed up. Allow to cool.
    7. Meanwhile, make oreo filling by softening coconut butter in a microwave safe bowl for 15 seconds.
    8. Add the coconut powdered sugar and vanilla and mix until combined. Coconut powdered sugar is made by simply pulsing regular coconut sugar in a food processor for 1-2 minutes.
    9. Drop 1 tsp of filling in between two sandwich cookies and enjoy!
