Roasted Carrot Fries (AIP, Paleo, Keto)
Makes: 3-4 servings
- 1 lb bag of carrots
- 2 tbsp olive oil or coocnut oil
- Salt to taste
- Peel the carrots. If they are thin, leave them whole, but if they are very thick, cut them in half lengthwise to ensure they will become crispy.
- Toss the carrots in oil and salt and spread them out on a sheet pan with enough space between them so that they are not touching. This will ensure they get extra crispy.
- Bake at 350F for 40-50 minutes until the bottoms brown and the tips of the carrots get crispy.
