Roasted Carrot Fries (AIP, Paleo, Keto)

Makes: 3-4 servings

  • 1 lb bag of carrots
  • 2 tbsp olive oil or coocnut oil
  • Salt to taste
  • Instructions:
    1. Peel the carrots. If they are thin, leave them whole, but if they are very thick, cut them in half lengthwise to ensure they will become crispy.
    2. Toss the carrots in oil and salt and spread them out on a sheet pan with enough space between them so that they are not touching. This will ensure they get extra crispy.
    3. Bake at 350F for 40-50 minutes until the bottoms brown and the tips of the carrots get crispy.
